HSC 218: Nutrition

This course explores the basic scientific principles of human nutrition, including the six classes of nutrients and their forms, functions, and dietary sources, and their role in human growth and development, as well as consequences of dietary deficiency and excess. The role of nutrients in metabolism and energy pathways will be examined, with a focus on how nutrients are digested, absorbed, assimilated, metabolized and utilized. Students will analyze their own personal diet, and compare it to current nutrition recommendations for health.

The relationships between diet and disease will be investigated, and the existence of health disparities and social determinants of health will be explored as they relate to outcomes in the nutritional status of individuals and populations.
